Brown Rice Spelt Morning Glory Muffins 

Ingredients

1 cup spelt flour

1 cup brown rice flour

1 tsp baking soda

1 tsp baking powder

2 Tbsp ground flaxseed

1/2 tsp of sea salt

1 tsp cinnamon

1 tsp nutmeg

2 eggs

2/3 sunflower oil

1/3 cup evaporated cane sugar

1/3 cup light brown sugar

2 tsp vanilla

1 red delicious apple, grated

3 medium carrots, grated

1 small zucchini, grated

Directions

1. Combine all the dry ingredients in a large mixing bowl. In a separate bowl, mix together all the wet ingredients with a whisk and then slowly add dry ingredients into the bowl.

2. Add grated ingredients to the mixture. Meanwhile, toast some slivered almonds (approx. ¼ cup) and coconut (approx. ¼ cup). Add to mixture and stir.

3. Spoon everything into a muffin pan and bake at 350 degrees for 25 minutes.
